If I was given a free year to work on something Symbian, I personally would have a good look at the Symbian software distribution "problem" that is discussed e.g. in this thread over there at All About Symbian:
http://www.allaboutsymbian.com/news/item/4048_Are_Killer_Apps_No_Longer_Poss.php

Designing and implementing something that makes searching and buying Symbian software as easy as searching and buying music in the Apple iTunes store, with a client component on the phone and a server component for the store on some server.

I think implementing something nice would not be that much coding work, if carefully designed and over-engineering wisely avoided, but the conceptual work to come up with something that really succeeds at solving the problem is probably very demanding.

I would probably spend half a year brainstorming, looking at existing distribution systems for anything remotely "software" or "content", and in general get to know all the players in the Symbian "ecosystem" (the software authors, the store owners, the carriers, the smartphone users) quite well, and only in the second half year doing the actual coding...
